Teff is the latest &#8220;superfood&#8221; to hit American food shelves and thanks to its nutrition profile, it has caught the attention of one health-conscious group in particular: runners.<\/p> <figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/i0.wp.com\/images-prod.healthline.com\/hlcmsresource\/images\/AN_images\/amaranth-on-spoon-1296x728.jpg?w=1155&amp;h=1528\" alt=\"\"\/><\/figure> <p id=\"mntl-sc-block_1-0-2\">Contrairement \u00e0 ce que les Am\u00e9ricains pourraient penser, le teff n\u2019est pas nouveau. C\u2019est un aliment de base depuis des si\u00e8cles en \u00c9thiopie, o\u00f9 il est souvent transform\u00e9 en ce d\u00e9licieux pain plat au levain appel\u00e9 injera, qui est courant dans les restaurants \u00e9thiopiens. Il se trouve \u00e9galement que c\u2019est la principale composante du r\u00e9gime alimentaire de nombreux membres de l\u2019\u00e9lite \u00e9thiopienne de la course \u00e0 pied, y compris Haile Gebrselassie, d\u00e9tenteur du record du monde du marathon; Kenenisa Bekele, d\u00e9tentrice du record du monde du 10 000 m\u00e8tres; et Tirunesh Dibaba, d\u00e9tenteur du record du monde du 5 000 m\u00e8tres en plein air.<\/p> <p id=\"mntl-sc-block_1-0-4\">Here&#8217;s what runner-chef Elyse Kopecky and four-time Olympic runner Shalane Flanagan had to say about teff in the cookbook they co-authored, &#8220;Run Fast Eat Slow: Nourishing Recipes for Athletes.&#8221;<\/p> <p id=\"mntl-sc-block_1-0-6\">&#8220;We snooped around to see what Shalane&#8217;s competition eats and discovered the nutritional powerhouse that is teff. An ancient East African cereal grass, teff has been a staple of Ethiopian cuisine for thousands of years. With all of the running prowess coming out of Ethiopia, we couldn&#8217;t help but explore the magic of this tiny grain.&#8221;<\/p> <h2 class=\"wp-block-heading\" id=\"mntl-sc-block_1-0-8\">Grain minuscule, grande nutrition<\/h2> <figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/www.treehugger.com\/thmb\/E2Qo8q3_f9HO-pcRWVxzMf-v4gU=\/768x0\/filters:no_upscale():max_bytes(150000):strip_icc():format(webp)\/__opt__aboutcom__coeus__resources__content_migration__mnn__images__2017__06__teff-105408052bc242409f8c50b776ff6bad.jpg\" alt=\"\"\/><figcaption>It doesn&#8217;t look like much, but each grain in this bowl is packed with nutrition.\u00a0<\/figcaption><\/figure> <p id=\"mntl-sc-block_1-0-9\">Qu\u2019est-ce qui fait du teff une telle puissance nutritionnelle? Ce grain ressemblant \u00e0 une graine de pavot est riche en prot\u00e9ines, en fibres, en calcium, en magn\u00e9sium, en fer, en zinc et en vitamine B6. Il contient des niveaux \u00e9lev\u00e9s de lysine, l\u2019acide amin\u00e9 que notre corps utilise pour construire et maintenir le tissu musculaire. Il est sans gluten et facile \u00e0 dig\u00e9rer, il est donc bon pour les personnes atteintes de la maladie c\u0153liaque ou d\u2019autres troubles digestifs. Et il a un faible indice glyc\u00e9mique, c\u2019est donc un bon choix pour les diab\u00e9tiques ou d\u2019autres qui ont besoin de r\u00e9guler \u00e9troitement leur taux de sucre dans le sang.<\/p> <p id=\"mntl-sc-block_1-0-11\">Donc, oui, le teff a beaucoup \u00e0 faire, et cela ne fait pas de mal qu\u2019il ait bon go\u00fbt et puisse \u00eatre utilis\u00e9 dans une grande vari\u00e9t\u00e9 de plats sucr\u00e9s et sal\u00e9s.<\/p> <h2 class=\"wp-block-heading\" id=\"mntl-sc-block_1-0-13\">Succ\u00e8s et rat\u00e9s<\/h2> <p id=\"mntl-sc-block_1-0-14\">J\u2019avais beaucoup entendu parler du teff au sein de ma foule de course et j\u2019ai d\u00e9cid\u00e9 de l\u2019essayer. J\u2019ai fait de la bouillie de teff, des cr\u00eapes de teff et des biscuits au beurre de cacahu\u00e8te de teff et j\u2019ai re\u00e7u des critiques mitig\u00e9es de ma famille. Ma fille a\u00een\u00e9e et moi avons toutes les deux ador\u00e9 la bouillie de teff. Sa saveur unique, sucr\u00e9e et noisette a bris\u00e9 la monotonie de ma farine d\u2019avoine matinale habituelle. Ma plus jeune fille n\u2019a pas \u00e9t\u00e9 impressionn\u00e9e par les cr\u00eapes teff, les jugeant un mauvais remplacement pour la vari\u00e9t\u00e9 blanche moelleuse. Mais elle adorait les biscuits au teff (qui ne sont rien d\u2019autre que du teff, du beurre d\u2019arachide, du sirop d\u2019\u00e9rable et de l\u2019huile de noix de coco), donc c\u2019est une grande victoire. Amener mon pr\u00e9-adolescent \u00e0 manger un biscuit charg\u00e9 de prot\u00e9ines, de calcium, de vitamines et de fer et \u00e0 le consid\u00e9rer comme un dessert? Je vais certainement en faire plus.<\/p> <p id=\"mntl-sc-block_1-0-16\">Mais la grande question est, est-ce que tout ce teff a fait de moi un meilleur coureur? Je mange du teff semi-r\u00e9guli\u00e8rement depuis environ deux semaines maintenant, et je dirai que je me sens un peu plus fort quand je cours. Peut-\u00eatre que c\u2019est psychologique, ou peut-\u00eatre que c\u2019est le fer \u2013 un nutriment dont je ne re\u00e7ois pas souvent assez. Le teff me laisse \u00e9galement me sentir rassasi\u00e9 pendant une p\u00e9riode plus longue que mon bol traditionnel de flocons d\u2019avoine.<\/p> <p id=\"mntl-sc-block_1-0-18\">Teff m\u2019a-t-il transform\u00e9 comme par magie en la prochaine Shalane Flanagan ? Non. Mais cela a donn\u00e9 \u00e0 mon alimentation un coup de pouce nutritionnel et m\u2019a pr\u00e9sent\u00e9 de nouvelles recettes g\u00e9niales.<\/p> <p id=\"mntl-sc-block_1-0-20\">Quelqu\u2019un
